Cottage Cheese Salads

 

Cottage Cheese is a very versatile dairy product. What you see here can be served as the basis of a simple and nutritious snack, in the centre of a light lunch or as part of a major dinner!

 

Savoury Cottage Cheese Salad

 

1 tub cottage cheese

2 tablespoons finely chopped onions (red, white or green (spring onions or scallions))

2 tablespoons grated or finely chopped cheese: such as a strong Cheddar or 1½ tablespoons Edam and ½ tablespoon Blue Cheese

1 tablespoon finely chopped parsley

1 tablespoon finely chopped coriander

S&P to taste

 

All you need to do to generate one of the best salad ingredients is to mix all of the above in a bowl.

 

A cottage cheese salad is best served chilled and can be accompanied by a nice crusty bread, whether it’s white or wholemeal or rye doesn’t matter!

 

Serve the cottage cheese with the bread … add a green salad … add other salads …

 

Sweet Cottage Cheese Salad

 

1 tub cottage cheese

1 finely chopped Apricot (or Peach)

6 finely chopped deep red cherries

1 tablespoon of honey (optional)

 

All you need to do to generate one of the best salad ingredients is to mix all of the above in a bowl.

 

Again, serve this salad chilled in the way you might serve the savoury salad. Despite the name Sweet salad, this salad can be served as if it were a savoury: the fruit will not make it taste too sweet. However, if you add the honey, that’s a different thing: in that case, serving it as a savoury salad would be a matter of taste.
